Our brisket is dry rubbed, then smoked low and slow over hickory wood for a tender flavor-filled dining experience.
Bottom rounds of beef cooked hot and fast over charcoal and hickory wood. Sliced thin and then dipped in hot Au-Jus.
Our pulled pork is smoked low and slow over hickory wood and then hand pulled and piled high on a Kaiser roll, or just the meat.
Our barbecue chicken is dry rubbed, cherry wood smoked and fall of the bone tender.
Dry rubbed, smoked and basted with barbecue sauce; smoked again, and served by the 1/3, 1/2 or full rack.
We dry brine our salmon filets. Then smoked over cherry wood for a sweet, salty and smokey flavor that can't be beat!
Sweet or hot Italian sausage smoked over hickory wood. Moist and full of flavor.
Smoking our burgers and dogs allows them to retain their moisture throughout the cooking process.
